We pick finished orders agreed with you, rebuild them in the test copy and compare each cost line with the old sheet. Every difference is recorded with its cause and then fixed or explained.

Should we choose Odoo 19 or Odoo 20?

Both are covered by Odoo, along with 18. Odoo 20 came out on 24 September 2026, so we check whether every app you need is ready for it; if one is not, 19 may be the safer target for now.

Do we lose our old sheets after the move?

No. They are archived as they were on the switch date, so anyone can refer back to them. New work happens only in Odoo, which stops the two from drifting apart.
